Earl Grey Linzer Cookie Recipe – Baking with TEA!

Combining classic Earl Grey tea leaves and a delicious homemade low-calorie Earl Grey Jelly to produce a soft and delectable Linzer cookie – perfect for a tasty teatime treat, gifting, or for a flavorsome something sweet.  

What is a Linzer Cookie?

Linzer cookies were created in Linz, Austria, and are popular throughout the world as a tasty treat. The cookie is easily recognized by having two layers: The bottom layer is a biscuit topped with various preserves, jellies, jams, and in our case a delicious, Earl Grey Jelly. The top layer is a biscuit layer with a shape cut out to reveal the delicious filling.

Make your Earl Grey Jelly

  • Prep Time: 10 mins
  • Cook Time: 10 mins 
  • Total Time: 20 mins

What you’ll need:

Method:

  • Step 1: Brew the Earl Grey loose tea leaves in the 2¼ cups of water for 3-4 mins, then strain
  • Step 2: Add the brewed tea and lemon juice to a saucepan and mix well. In a separate bowl mix the granulated sugar and agar-agar powder 
  • Step 3: Bring the brewed tea and lemon juice mixture to a boil and add the granulated sugar and agar-agar mixture to the saucepan and stir vigorously for 1-2 minutes until the sugar and agar-agar is dissolved – once the jelly comes to a full boil, remove from heat immediately
  • Step 4: Fill your glass jars, seal them tightly and place them in the refrigerator for setting

Make your Delicious Linzer Cookies

  • Prep Time: 20 mins
  • Cook Time: 13-15 mins
  • Total Time: 35 mins

What you’ll need:

  • 2¼ cups all-purpose flour
  • 1 cup blanched almonds
  • ½ cup granulated sugar
  • 2 tbsp. Earl Grey loose leaf tea 
  • 1 cup cold unsalted butter (cubed)
  • ½ tsp vanilla extract/paste
  • 1 pinch salt
  • Confectioners icing sugar for dusting

Method:

  • Step 1: In a food processor, pulse the Earl Grey loose leaf tea until finely ground – remove from processor and set aside
  • Step 2: Add almonds to the food processor and pulse until finely ground, then add the flour, granulated sugar, salt, and the processed finely ground Earl Grey loose leaf tea – pulse a few times to combine the ingredients
  • Step 3: Add the cubed butter and vanilla extract and pulse until the mixture is crumbly
  • Step 4: Remove the dough and knead it well until it comes together. Shape the dough into a disk, wrap tightly in cling wrap, and set in the refrigerator for at least 1 hour
  • Step 5: Preheat the oven to 165°C and line baking trays with parchment paper or silicone mats 
  • Step 6: Roll the dough into ⅛ inch thickness between 2 sheets of parchment paper or cling wrap. Cut full circles on half of the dough and Linzer shapes on the other half of the dough (with cut-outs) – place the cookies lightly in the prepared pans
  • Step 7: Bake until golden brown 13-15 mins and allow to cool completely before proceeding 
  • Step 8: Once the cookies are cool – Spread 1-2 teaspoons of your Earl Grey Jelly onto the bottom layer (full circle) of the cookie – then lightly cover with the top layer (layer with the cut out) – dust with confectioners icing sugar
  • Step 9: Allow setting for 5-10 mins
  • Step 10: Enjoy!
